Thirst is a dry feeling in the throat or mouth prompting a person to drink water. Excessive thirst, experienced without any notable reason, referring as Polydipsia.

An activity is responsible for the feeling of excessive thirst. Consuming spicy or hot foods, monosodium glutamate,  exposure to warm temperatures and extreme physical activity cam lead to increase your thirst.

How much water to consuming daily?

Doctors recommend drinking eight or nine glasses of water daily, consuming actively that amount to hydrate your body.

Kluang Third Generation Mama Cendol stall

Kluang Third Generation Mama Cendol stall

Kluang Third Generation Mama Cendol stall.

A visit to Kluang without tasting the third generation Mama cendol stall will not be completed. This popular dessert takes its name from cendol, which is the Javanese term for the green worm-like jelly. Chendol was first introduced in Singapore by Indonesians. Later, Indian-Muslim hawker started selling the dessert. The Peranakans also invented their version, which had the addition of sweetened red bean.

A hot sundry

This is a typical scene in Malaysia during the hot sundry Kluang afternoon.

“Mama, I want one Ice Kacang please.” a pretty lass order.

“Mama, three bowls of cendol with more gula Melaka” shouts another table.

“Mama, I want additional red bean paste.” A driver on his Merced Benz stopped in front of the stall about 50 meters from the Coronation abandoned cinema traffic junction.

Social Status

Regardless the social status of the individual, there is one typical Kluang famed Mama stall selling Cendol next to the Sen Electrical shop. It is located in the old Metro Cinema Building. It operates daily rain or shines from 9 am to 6 pm. It is the 3rd generation operating it now.

Mama Cendol

There is about 6 round table with an Industrial stand fan and two small wall fans plus a ceiling fan. It is usually occupied by people from all walks of life. The owner is rather busy standing all day long preparing this dessert with the help of his Indian Muslim wife. The serving is super fast with his skillful way scoping the variety of ingredients into a bowl fresh griddle ice. It’s hard to resist the allure of cendol. It is a seductive concoction of creamy coconut milk, fragrant palm sugar and slippery green jelly noodles and a tablespoon of red bean paste.

What is Malaysian cendol?

This ubiquitous South East Asian dessert called cendol is something I often yield to it when I came to my hometown. It is the combination of palm sugar, coconut milk, and screwpine leaves which flavors make up the base for a majority of sweets from this region. Any dessert with shaved ice goes down well in the tropical heat!

Malaysian use a local palm sugar called gula Melaka. It has a richer, more complex flavor profile of brown sugar and molasses.

Calories count

The type of the ingredients will determine the calories counted in a bowl of cendol. It’s calories range from 167 to 836. A health conscious minded guy would go for the basis, the gula Melaka, the cendol and shaved ice or perhaps a teaspoon of coconut milk.

Cook Your way to a Slim fit body within minutes

How to Cook your way to a slim fit body within minutes.

Malaysian love to enjoy eating outside for any celebration with friend and family. How clean is the food preparation anyone guesses? The deep-fried dish is our Malaysian favorite, to maximize their profit, most outlets using recycled cooking oil. Consequently,  Malaysian crowned as the fattest nation in the Asian country.

Inflation

The implementation 6% GST on 1st April 2015 and 1st Nov 2016, the removal of cooking oil subsided, the food price is soaring hurting the lower and middle-income group. The restaurant adjusted the price without any ceiling. One can have a decent meal of RM10.00 not anymore unless you are willing to fork out RM20.00. The Hudson’s choice left for us is to cook our meal at home. In order to meet end meet, some city dweller packed home cooking food to school or working.

The recent revolution of Halogen Turbo oven has reduced the cooking time and a lot of saving in electricity consumption and usage of cooking oil. You cook your food to your liking in a perfect way.

Halogen oven?

An infrared way to cook your favorite meal, with an invisibility of light. Being invisible, it manifests itself in the form of radiant heat and when we feel heat without seeing the light.

Not using radioactive ray which could cause damage to the DNA. The radiant heat transfers from the heating element to the food. It cooked directly through the air molecules, raising the temperature of the foodstuffs to very high levels and thus cooks the food.  The toasters and grills in our daily usage cooking across the world make use of the same rays.

Roast

Roasting my 2 Kg of Xiangjian Lamb within 90 minutes, which is faster than using the convention oven. The lamb turn, moist, succulent, piping hot, browned and not raw in the middle. I can see the fat pour out of the meat which is healthy. We can see cooking without opening the oven door, as it is a counter top unit you haven’t had to bend down to check it, either.

You can cook your green on the raw side, full of vitamin, by adding a few drops of sunflower oil over a stainless plate of French bean and garlic. Cook according to your taste medium cook or fully cook by adjusting the time and temperature.

Steam

The Teochew steam white Pomfret is not a problem too, depending on the size of the fish. Pouring some water in the glassware covers it with the potted hole aluminum lid. The steam fish is ready to serve on the table within 5 minutes.

Baked

You can bake cookie by watching the time and not overcooked it. The great cakes, bread or biscuits will turn out just like a normal oven. You can put any normal oven-ware pots, pans, cake tins, grease proof paper etc in a halogen, unlike the microwave it isn’t affected by the container.

Cleaning

Cleaning the grease and oily glassware is a nightmare to anyone. Put some detergent and water, press it to clean and sterilized mode. Pour out the boiling water and raise with running tap water that saves us ample time for cleaning.

Healthy Kluang Desa Mutton Biryani Best Favourite Choice

Healthy Kluang Desa Mutton Biryani Best Favourite Choice

Healthy Kluang Desa Mutton Biryani Best Favourite Choice.
Mutton Biryani is a healthy nutritional food providing you with immunity power. It is healthy for the body and increases the strength of the bone. You can consume Mutton Biryani along with side dishes such as Pappadam, salad, and pickles.

Origin

There are many versions of the origin of Biryani. It is mainly origin during the Moghul Empire in the Indian south continent.
But the main basic remains the same with many species added to enhance the flavor. It mainly eats long-grain rice in the India subcontinent. The Middle East prefers Nan over the rice.

Hyderabad Biryani

I first tasted the best Biryani that I had ever eaten in a restaurant. It was a stone throw away from the main gate of the Osmania Medical College in Hyderabad.  It was extremely hot and spices with fresh dried raisin added into the rice. After 30 minutes of devouring, my Iranian friend dashed off to the toilet.

“What happened to you Ali, are you alright?

“Jamin, the mutton was extra hot. I feel the burning sensation around my anus. I am not used to taking hot chili spices food back home.” he explained.

Desa Biryani

Without tasting the finger-licking Desa Biryani, a visit to Kluang is not completed. The Desa biryani is a double story shop lot situated parallel to the main road between Kluang and Air Hitam. It is a traffic light junction before you take a left turn, in front of the Petronas kiosk. It is a sibling affair business runs for almost 2 decades by two brothers in Taman Desa, Kluang.

In addition, to the freshly earlier morning preparation for the healthy Kluang Desa Biryani, it also used the imported Pakastani long-grain rice. Of course, with the daily fresh purchase from the market of all the main ingredients like mutton chop and the fresh cucumber and pineapple.  A thumb up for the owner’s hard work raised at 4 am to shop the necessities. Despite the fact, the price of RM 14.00 for a plate full of healthy Desa Biryani, customers are flocking to the shop.

Indeed the price is rather steep in comparison with other charges RM10.00 for a plate. Once you have tried, you come will come back for more.  Of course, I am too,  one of the regular customers there.

During the weekend, you could see a number of a busload of tourists flocking there for the taste of a lifetime. Absolutely, it is worth.

Sold out

In the normal day, it starts to serve the throng of customers queuing up as early as 10.30 am. 2 large pots of Basmati long grain rice would be finished by 12.30 pm. I feel sorry for the latecomer. You can choose either mutton or chicken with side orders like Pappadam beside the cucumber and pineapple Achar. Or you can be sipping a cup of cool lemon ice refreshing drink to round up your meal.

Since it occupies only one shop lot, the customer prefers to pack their food eating in the cool comfort in the office or at home. This is a setback for this shop. Once you have eaten, you would come back for more. People eat with full perspiration under the fan as long as the food is authentic and delicious.

Our Bodies curve for spicy food. What are the healthy benefits of spicy food in weight loss management?

1. Weight Loss: The extra kick of hot sauce or a chopped jalapeno can make even the most tasteless food more palatable, causing you to be more likely to stick with your weight loss plan. It helps to  increase your  metabolism.

Studies show that the main compound in chilies, called capsaicin, has a thermogenic effect and may cause the body to burn more calories for 20 minutes after consuming.

Capsaicin is the main, active compound found in hot peppers that give you that distinctive burning sensation when eaten. Spices that are high in Capsaicin are chili peppers, jalapenos, habaneros and cayenne pepper.

A 2012 medical study,  shows the benefits of hot red peppers in weight management. Participants consumed 1 to 3.5 grams of red pepper and this enhanced heat production (thermogenesis) and increased fat burning.

Another study examined capsaicin in relation to weight maintenance after a percentage body weight loss of 5 % to 10 %.  91 overweight volunteers underwent a 3 months weight loss study.

The group was divided into two groups, one group took Capsaicin (135 mg) and the other group a placebo. This study also concluded that capsaicin treatment caused more fat oxidation (burning of fat) during weight maintenance. Please do not consume capsaicin supplements.

You can add some of   the spices with a more tolerable zing to your dishes. Sliced ginger in a cup of tea, shrimp coated in cumin and coriander then sauteed in a skillet. Adding red pepper flakes to stir-fry or whipping up a delish chicken curry.

Most the spicy curry food like Botak curry mee adds coconut satan for an aromatic flavor.

The coconut satan benefits you with its medium-chain fatty acid (MCFA) structure and its lauric acid content.

The  MCFA structure provides health benefits for you.

The coconut satan’s medium-chain saturated fat gets converted into energy the moment your body absorbs it. Your body converts the fat just like the  carbohydrate. That makes coconut satan a good energy provider and booster for your bodily needs.

Lauric acid in coconut satan benefits your health like  the lauric acid in human breast milk does for infants. It helps to improve your immune system. You are protects against intrusive viruses and bacteria.

But do you know that coconut satan actually carries good saturated fat that benefits your health and weight loss by easily converting to energy as soon as your body absorbs it, just like what your body does on carbohydrate?

You are well protected by eating a reasonable amount of coconut satan. By reasonable amount, I mean you take it in moderation. Eating a lot of it may make you indigestion which too much calories for your body needs. Any excess calories not used for energy, they’ll ultimately get stored into your fat cells which are bad for your health.

Hainanese’s Tranditional Way of Making Aromatic Fresh Coffee Bean

Hainanese's Tranditional Way of Making Aromatic Fresh Coffee Bean

Hainanese’s  Traditional Way of Making Aromatic Fresh Coffee Bean

Coffee, the miraculous brew that gives our mornings the extra kick we require to last throughout the day. With an ever-popular coffee culture on the rise, it is amazing to realize Kluang is a heritage town since earlier 1900 era.

Hainanese’s  Traditional Way Making Fresh Coffee Bean

First, a Roaster roasted the green bean. One needs the experience and expertise to roast coffee traditional coffee. The duration of time to roast the coffee bean is about estimation.

The Hainanese will NEVER reveal their trade secret on how to make the perfect aromatic coffee bean to the public no matter how I trick him several times. You listen for the sound when you roast the beans. During the first crack, you will hear popping sounds like firecrackers. When the second crack happens, it is a louder, more insistent firecracker sound, then you know it is already roasted.

A large mixing wok where Foreigner especially the young Bangladesh workers mix the roasted bean with margarine and sugar.

“Why Bangladesh, not Malaysian workers?’

“Ai you, you don’t may, Malaysian where can stand the heat and hot plus dark dirty working area.  Here, no air-con, local people see “terus cabur” he answered with local slag  Malaysian English.

“What is the ratio for the coffee bean with margarine and sugar” I probed further.

“Sorry lah, it is a trade secret!” He annoyed with my question.

After this process, Another machine is used the dry the coffee bean.  At this point, the coffee beans are in clumps due to the mixture of margarine and sugar.

A customized designed machine is used to the clumps. The final step is optional, grind the beans or not. Most of the delighted customers prefer to grind the coffee beans right under their nose to determine the freshness of the coffee powder.

Roasting traditional local coffee is a tough job because of the smoke and the heat.

Why Hainanese Makes the Best Coffee

There is a saying among the local people.

If one day in the morning, the Hainanese don’t drink a cuppa, they go “Gila“.  It means go crazy.

Hainan coffee, called “Kopi,” is for some an acquired taste. Made by pouring boiling water through grounds held in a cloth “sock” filter. It has a thick, strong and bitter taste. It is drunk hot or iced, usually mellowed with sweetened condensed milk. Served along  “Western” dishes like toast and eggs, and Malaysian standards such as fried rice and noodles and the famous local dish “Nasi Lemak” wrapping in the freshly cut banana leaf. Not to miss the slice of bread, wholemeal or Hainan’s Bread is charcoal-grilled toast with butter and kaya, a coconut jam.

Liberica coffee, a variety native to Africa finds its way to the smallholder in mostly in the central and southern states of Selangor and Johor in 1800.  It is inferior and cheap quality, the Hainanese adding margarine and sugar to the coffee bean to give a disguise and uniqueness taste.  The coffee bean  has a distinctive burnt flavor.

Do you agreed with me, the Hainanese take to pain to make a cuppa welcoming the day. ? Your opinions and comments are welcomed.
