Kluang Third Generation Mama Cendol stall.  

A visit to Kluang without tasting the third generation Mama cendol stall will not be completed. This popular dessert takes its name from cendol, which is the Javanese term for the green worm-like jelly. Chendol was first introduced in Singapore by Indonesians. Later, Indian-Muslim hawker started selling the dessert. The Peranakans also invented their version, which had the addition of sweetened red bean.

A hot sundry 

This is a typical scene in Malaysia during the hot sundry Kluang afternoon.

“Mama, I want one Ice Kacang please.” a pretty lass order.

“Mama, I want additional red bean paste.” A driver on his Merced Benz stopped in front of the stall about 50 meters from the Coronation abandoned cinema traffic junction.

Social Status

Regardless the social status of the individual, there is one typical Kluang famed Mama stall selling Cendol next to the Sen Electrical shop. It is located in the old Metro Cinema Building. It operates daily rain or shines from 9 am to 6 pm. It is the 3rd generation operating it now.

Mama Cendol 

There is about 6 round table with an Industrial stand fan and two small wall fans plus a ceiling fan. It is usually occupied by people from all walks of life. The owner is rather busy standing all day long preparing this dessert with the help of his Indian Muslim wife. The serving is super fast with his skillful way scoping the variety of ingredients into a bowl fresh griddle ice. It’s hard to resist the allure of cendol. It is a seductive concoction of creamy coconut milk, fragrant palm sugar and slippery green jelly noodles and a tablespoon of red bean paste.

What is Malaysian cendol? 

This ubiquitous South East Asian dessert called cendol is something I often yield to it when I came to my hometown. It is the combination of palm sugar, coconut milk, and screwpine leaves which flavors make up the base for a majority of sweets from this region. Any dessert with shaved ice goes down well in the tropical heat!

Malaysian use a local palm sugar called gula Melaka. It has a richer, more complex flavor profile of brown sugar and molasses.

Calories count

The type of the ingredients will determine the calories counted in a bowl of cendol. It’s calories range from 167 to 836. A health conscious minded guy would go for the basis, the gula Melaka, the cendol and shaved ice or perhaps a teaspoon of coconut milk.

Roasting my 2 Kg of Xiangjian Lamb within 90 minutes, which is faster than using the convention oven. The lamb turn, moist, succulent, piping hot, browned and not raw in the middle. I can see the fat pour out of the meat which is healthy. We can see cooking without opening the oven door, as it is a counter top unit you haven’t had to bend down to check it, either.

You can cook your green on the raw side, full of vitamin, by adding a few drops of sunflower oil over a stainless plate of French bean and garlic. Cook according to your taste medium cook or fully cook by adjusting the time and temperature.

Steam

The Teochew steam white Pomfret is not a problem too, depending on the size of the fish. Pouring some water in the glassware covers it with the potted hole aluminum lid. The steam fish is ready to serve on the table within 5 minutes.

Baked

You can bake cookie by watching the time and not overcooked it. The great cakes, bread or biscuits will turn out just like a normal oven. You can put any normal oven-ware pots, pans, cake tins, grease proof paper etc in a halogen, unlike the microwave it isn’t affected by the container.

Cleaning

Cleaning the grease and oily glassware is a nightmare to anyone. Put some detergent and water, press it to clean and sterilized mode. Pour out the boiling water and raise with running tap water that saves us ample time for cleaning.

Without tasting the finger licking Desa Biryani, a visit to Kluang is not completed. The Desa biryani is a double story shop lot situated parallel to the main road between Kluang and Air Hitam. It is a traffic light junction before you take a left turn, in front of the Petronas kiosk. It is a sibling affair business runs for almost 2 decades by two brothers in Taman Desa, Kluang.

Sold out

In the normal day, it starts to serve the throng of customers queuing up as early as 10.30am. 2 large pots of Basmati long grain rice  would be finished by 12.30pm. I feel sorry for the late comer. You can choose either mutton or chicken with side order like pappadam beside the cucumber and pineapple achar. Or you can be sipping a cup of cool lemon ice refreshing drink to round up your meal.

Since it occupies only one shop lot, the customer prefers to pack their food eating in the cool comfort in the office or at home. This is a setback for this shop. Once you have eaten, you would come back for more. People eat with full perspiration under the fan as along as the food is authentic and delicious.
